Perfect paired with spinach dumplings, for gratinating dishes, or as a flavorful addition to the traditional South Tyrolean “Brettlmarende” served with bread or boiled potatoes.
Seiser Alm
Semi-hard cheese
Powerful and full of character, just like its namesake, the Seiser Alm, the largest high-altitude alpine pasture in Europe, located in the Dolomites northeast of Bolzano. The cheese is enclosed by a yellow rind with slight reddish hues. The paste ranges from pale yellow to yellow and features sparse, irregularly distributed, pea-sized holes. Its texture is firm when sliced, pleasantly smooth on the palate, with a delicate creamy melt. With its finely spiced and slightly tangy aroma, accompanied by subtle toasted notes, “Seiser Alm” cheese is a true delight from the mountains of South Tyrol, whose complex aromatic components transport you into the world of alpine indulgence.
The cheese is naturally lactose free (<0.1 g lactose / 100 g) due to the typical production process. The cheese containes galactose.
