The "Stevlio PDO" combines unaltered quality, authenticity, tradition and a guarantee of origin. In 2007 this cheese, the only South Tyrolean one so far, received the certificate of protection from the European Union. Its intense, aromatic and elegant taste makes this cheese so unique; its recipe dates back to 1914. One not only tastes light nutty notes, but also fine wood nuances that are due to the storage and aging on wooden planks. The light- to straw-yellow cheese dough has a soft, creamy consistency and displays pea-sized holes.

The characteristic traits of the "Stelvio PDO" are due to the high-quality ingredients and minimum 60 days aging process. The ca. 9 kg cheese wheel is maintained with salt water and indigeneous red cultures, that give the Stilfser a distinctive flavor. The cheese is wrapped in a compact and dry rind.
