This cheese is enclosed in a firm, dry,
rustic rind. The inside of the
cheese is pale yellow in colour and is completely solid without holes. Its consistency in
the mouth is short, firm, but nevertheless
smooth and melting. The smell and flavour of the cheese are
very intense and highly complex with milky, toasted, long-lasting notes. After the Gran Spicchio and the Schwarzenstein, the Alta Badia receives the longest maturation process among the Mila cheeses.
