The Ortler semi hard cheese is named after the highest mountain in South
Tyrol: the majestic Ortler. This mild cheese is enclosed in a firm, waxy rind. The inside of the cheese is pale to straw
full of round or elongated holes. Its consistency in the mouth is compact,
but at the same time smooth and slightly crumbly. Its aroma is complex, containing milky and nutty notes with a hint of pistacchio. The flavour is dominated by a pleasant sapidity, due to the addition of goat rennet.
