The Vinschger is enclosed in a firm,
straw-yellow rind. The inside of the cheese presents a rich
yellow colour and has only a
few round holes. Its consistency on the palate is supple and melting. The smell and flavour of the cheese are
intense and complex with fruity flavours
of grass and hay. This cheese has also a strong finish.
The complex flavour notes linger long
on the palate.
