South Tyrolean roots, passion and creativity in the kitchen

Growing up in a family of restaurateurs in Trafoi, in the Vinschgau Valley, Fabian Raffeiner discovers the world of cooking at an early age. After training in South Tyrol, his career takes him to Switzerland, where he earns his first Michelin star. In Bern, he later opens the vegetarian restaurant “Zoe”: a project that puts vegetables centre stage and shows just how surprising they can be, even in fine dining.

His connection to his homeland remains strong. After his years in Switzerland, Fabian returns to South Tyrol to be close to his family and once again live among the mountains he calls home. The experience gathered along the way meets his roots, shaping an inquisitive approach to cooking that gives ingredients careful attention and leaves room for new ideas.

This meeting of quality and creativity also marks the beginning of his collaboration with Mila. Together, we have developed six recipes that explore the versatility of our mascarpone: three savoury creations and three sweet treats, revealing fresh possibilities in a familiar ingredient.

From risotto and sweet potato purée to San Sebastián-style cheesecake and tiramisù, Mila mascarpone brings its creaminess and delicate flavour to Fabian’s creations. Recipes to discover, try and share – bringing a little of his creativity into your own kitchen.

These six recipes are just the beginning of our collaboration. We are delighted to embark on this journey with Fabian and curious to see where it takes us. Who knows what other ideas and delicious creations the future has in store!
