Mini Quiches with cured ham and "Sasso Nero"

for 4 mini quiches

  • 250 ml cream
  • 1 egg
  • 50 g "Sasso Nero" cheese, grated 
  • 50 g South Tyrolean cured ham
  • 1 green onion
  • 1 tablespoon chives, chopped 
  • 2 rolls of salted shortcrust pastry


Slice the green onion.

Mix the egg, cream, pepper, salt and the chives in a bowl. Stir well and then add the "Sasso Nero" cheese to the egg mixture.

Cut circles out of the salted shortcrust pastry – a bit larger than the quiche molds. Grease the molds, add the shortcrust pastry and straighten the edges by removing any excess dough.

Place some of the cubed ham on the base, add the green onions and pour the cheesy egg mixture over top. Bake for 20 minutes at 200°C.
