Potatoes au gratin with "Monte Maria" cheese, leek cream and truffles

for 4 persons

  • 200 g leeks
  • 1 garlic clove, finely chopped
  • 30 ml olive oil
  • 1/2 chili pepper, fresh and finely chopped
  • 2 tablespoons of parsley leaves
  • 150 ml cream
  • 4 potatoes, boiled and peeled
  • 4 slices of “Monte Maria” cheese
  • 8 g summer truffle, finely grated
  • salt
  • pepper


Clean the leeks and cut them into slices. Cook them together with the garlic in olive oil.

Season with salt and chili pepper, add cream and cook for about 5 minutes.

Mix the leek and cream mixture with the parsley in a blender.

Season the hot potatoes with salt and pepper, cover them with the cheese slices and bake them in the oven at 180°C for about 5 minutes.

Arrange the leek cream in deep plates. Place the gratinated potatoes on top and serve with the finely grated summer truffle.
