In a bowl, whisk together the eggs with salt and pepper.
Cut the mozzarella into thin 1-2 mm slices and split the sandwich bread in half to obtain two rectangles of the same size.
Place two or three slices of mozzarella on each rectangle and then cover it with a second rectangle to form a sandwich.
Dip the sandwich in the whisked egg and then immediately cover it with the bread crumbs ensuring that they stick well, especially around the edges. Repeat this process for a second time to prevent the mozzarella from separating from the bread crumbs.
Fry one sandwich at a time in plenty of oil at about 150°-160°C for 2-3 minutes until golden brown.
Drain, season with salt and serve hot.
