Pistachio Chocolate Cookies

Ingredients

makes about 50 pieces

for the dough

  • 250 g flour
  • 250 g almonds, finely ground
  • 1/2 packet baking powder
  • 250 g butter
  • 200 g sugar
  • 2 eggs
  • 100 g dark chocolate (couverture), roughly broken into pieces
  • 100 g pistachios, halved
  • 1 pinch of salt

Preparation

Place the flour on a work surface and mix with the ground almonds and sifted baking powder.

Knead the diced butter with sugar, eggs, chocolate, pistachios, and salt. Combine with the flour mixture and work into a smooth dough.

Shape the dough into a roll about 3 cm thick, wrap in cling film, and chill in the refrigerator until firm.

Roll the dough log in sugar, then cut into slices about 1 cm thick.

Place the slices on a baking tray lined with parchment paper and bake at 190°C for about 10 minutes.
