Alta Badia is the most esteemed and treasured of Mila’s long-ripened
cheeses. Other than GranSpicchio, Alta Badia is Mila’s only hard cheese.
The smell of the rind is reminiscent of nuts and other
toasted notes. The rind is closed, a little rough, and dry to the touch.
The inside of the cheese is a deep shade of yellow. Its
texture is completely closed without holes. It has a sharp initial taste, but
it is supple and melts in your mouth. The smell and taste of the cheese is
intense and very complex. It also gives off milky, toasted notes.
