The Pragser is enclosed in a very soft,
pale yellow rind. The inside of the cheese is pale straw yellow and it contains many
rounded holes. Its consistency in the mouth is soft, supple
and elastic. The smell and flavour
of the cheese are aromatic, milky and
creamy. The flavour contains a slight
hint of the forest which reminds of the champignons.
