“Alta Qualità” fresh milk

The ministerial decree D.M. 185/1991 regulates the requirements for labelling fresh pasteurized milk as “Alta Qualità” right down to the last detail. So for example, the fat content of the resulting pasteurized fresh milk should not be less than 3.6 g per 100 millilitres, and the protein content should not be less than 3.2 g per 100 millilitres.
