This cheese is named after the impressive peak in the Valle Aurina. It not only looks but tastes amazingly. The cheese is wrapped by a dry, black rind which emphasizes its special features and captures its powerful aroma. The cheese paste is light to straw-colored, and is completely sealed. The "Sasso Nero" has a solid and crystalline texture, lightly melting in your mouth.  Its long special aging process gives the hard cheese its aromatic spice and fine notes of roasted chestnuts, dried fruits and honey. You‘ll sense a slight hint of caramel and chocolate flavors in the aftertaste. This explains why the flavor is quite complex, powerful and unmistakable. A cheese with character and recognition.
