The Pustertaler Bergkäse (Pustertal Valley Mountain Cheese) is, as the
name implies, made from natural fresh milk produced by the mountain farms of
the Pustertal Valley. The characteristic features of this mountain cheese are
its dark yellow to slightly reddish rind and its yellowish-white interior with
a few pea-sized holes. The mountain cheese wins followers with its smooth,
soft, very elegant consistency, and pleasant taste.
