Natural yoghurt specialities from South Tyrol
Since Mila’s first
yoghurt bottling in 1977, yoghurt consumption has continued to grow steadily. Because yoghurt has so many characteristics that benefit health, a
balanced diet is virtually inconceivable without it. Production of yoghurt that is truly premium grade – both in terms of its quality and its flavour – requires uncompromisingly
high standards of quality and hygiene; these standards must be maintained throughout every step of production.
Mila makes its yoghurt exclusively with fresh milk derived from closely supervised
alpine dairies in South Tyrol. The company can thus guarantee that only
natural fodder 100% free of GMOs (genetically modified organisms) is used and that
species-appropriate livestock maintenance is practised.
Mila also guarantees that yoghurt processing will occur within 24 hours of milking. The yoghurt makers transform fresh milk into yoghurt by adding several kinds of
live yoghurt cultures. During this fermentation process, the bacteria transform part of the lactose contained in the milk into lactic acid. Yoghurt obtains its characteristic taste through this wholly natural process. It is not only the quality of the cultures used, but also the pre-treatment of the milk and the conditions under which the ripening occurs that determine the quality of the yoghurt’s consistency and its taste.
