STILFSER CHEESE D.O.P.
A specialty cheese of protected origin from South Tyrol
Mila Stilfser Cheese D.O.P. (denominazione di origine protetta) is an archetypal
cheese from South Tyrol made with natural milk fresh from
alpine dairies in South Tyrol.
Recognizable by its yellow-orange rind, yellow-white paste and irregular, pea-sized eyes, it has a
smooth, slightly runny consistency. Stilfser Cheese DOP fully develops its intense aromas and flavours after a ripening period of at least 62 days. Its
strong flavour and distinctive spiciness give it a unique appeal.
In 2007, Stilfser Cheese received the European Union’s D.O.P. denomination – the first and only cheese in South Tyrol to do so – officially certifying its origin. This designation legally guarantees quality, authenticity and an historical connection to its place of origin.
