A popular specialty cheese from the Dolomites of the Pusteria Valley (Val Pusteria/Pustertal)
Mila Dolomitenkönig or King of the Dolomites is one of the most familiar and beloved speciality cheeses in South Tyrol. It is made exclusively with
mountain-fresh farmer’s milk from the
Pusteria Valley in the Dolomite Mountains.
After a
ripening period of 50 days, this full-fat table cheese displays a dark yellow rind and a velvety yellow paste. The consistency is quite
smooth. It has cherry-sized eyes that develop during an elaborate ageing process in which warm phases alternate with cold ones under carefully controlled conditions. This process gives a
mild aromatic quality, a hint of sweetness and a subtle nuttiness to the cheese.
