Mila’s latest creation is called Kräuterhexe, which means “herb witch”. Exceptionally mild and wonderfully aromatic, Kräuterhexe cheese is in a class all of its own. 

The secret is wholesome milk fresh from South Tyrol’s mountain dairies finished off with a mix of 15 different herbs and flowers. 

In order to fully develop the intense flavour of this specialty cheese, it ages for 30 days after salting—during which time it is turned and brushed with saltwater every day. At the end of the ripening period, the exterior of the edible rind is covered with aromatic herbs, calendula, and cornflowers: this gives Kräuterhexe its tantalising aroma and distinct flavour.
