Fresh cream made with farmers’ milk from alpine dairies in South Tyrol
The process of separating milk from the substance that contains milkfat yields
cream. It might be called “
sweet cream”, “
heavy cream” or simply “
cream”, depending on local traditions. With a
fat content of 30%, cream contains less protein than whole milk, yet is more lipophilic – that is, it contains more
fat-soluble vitamins.
Mila designates its fresh cream from South Tyrol either for direct consumption or for processing into derivative products such as cheese and butter. Unwhipped cream is ideal for
enriching a variety of dishes. Cream is often served whipped when accompanying sweet food: through
mechanical whipping or foaming – a process in which air is mixed into the cream – the volume of the cream doubles or even triples. The producer must chill both the container and the cream well in order to effectively whip cream; this speeds up the process, and stabilizes the whipped cream.

alpine dairy farmers’ milk from South Tyrol. It is available in a 200 ml size, as well as in 500 and 1,000 ml tetra pack containers.
