Creamy fresh cheese made with farmers’ milk from South Tyrol’s alpine dairies
Mila’s cheesemakers use only premium mountain-fresh farmers’ milk from South Tyrol in order to make
Mila’s fresh specialty cheeses. The process of
making fresh cheese was known as far back as in pre-Christian times. Milk or cream is curdled and then made solid by the addition of lactic acid bacteria. Rennet is sometimes added, depending on the type of cheese. Fresh cheese made without rennet does not need to be ripened and is thus
suitable for immediate consumption.
It takes three litres of premium South Tyrol farmer’s milk in order to produce just one kilogramme of creamy cheese. Mila Fresh Cheeses are
pure milk products. They contain – in concentrated form – all of the nutritionally vital components of milk: the high-quality protein
casein,
calcium in a particularly high concentration,
vitamins and
micronutrients. In addition, they are
easily digestible since their milkfat is broken down during the cheese making process.
