The cheese is covered with a firm, dry, black rind which underlines its special characteristics. It is solid, rough and compact. The compact and thick rind ensures that the strong aroma of the cheese is well preserved and protected. The red-smear rind has a very pungent aroma but also light and fruity notes. Also discernible is a fine and light note of natural cellar stone that indicates where the cheese was ripened. The inside of the cheese is light yellow to straw-yellow depending on the season, the curd is solid. Its structure is short, slightly crumbly but firm. The consistency on the palate is unexpectedly pleasant, fine, melting and mellow. This consistency is a treat for the palate; it is widely appreciated and loved. Aroma and taste of the cheese indicate that it is a ripe, high quality cheese full of character. It contains toasted, buttery notes. The taste notes range from milky, fruity and herbal to rusty. We discover notes of boiled potatoes, notes of dried fruit, a slight note of honey, and a light aftertaste of caramel and chocolate. Because of its special structure and long period of ripening the salt crystals can be felt on the tongue. At the same time Luis Trenker is particularly succulent. Its taste is therefore highly complex, strong and unmistakable. A cheese with character that is easily recognised. A cheese of new hope and potential.

Only long refined maturation delivers the full extent of this meltingly soft consistency and the wonderful aromatic flavour.

This extraordinary delicacy from South Tyrol needed an equally extraordinary name. And so it was only natural that we chose the name LUIS TRENKER. Just as Luis Trenker founded a new sector in fashion with an Alpine lifestyle, so this cheese shall open up a new world of flavour and become a delicate ambassador of South Tyrol.
How to enjoy

The cheese is the ideal completion of a fine dinner. Used as grating cheese it awards unique flavour to a spicy type of cuisine. Its creamy and grainy structure and its elegant but powerful flavour convince.

Our home is where nature is unspoilt:
In the heart of South Tyrol, one of the most beautiful landscapes in the Alps.
Most farms are small mountain farms with hardly more than a dozen cows.
The cows enjoy the juicy grass and hay, fresh spring water and plenty of exercise on the extensive pastures.
Their fresh milk is collected daily and delivered to the mountain cheese dairy in Brunico, where our expert cheesemakers turn it into a variety of delicious delicacies in less than 24 hours.

The 2,600 mountain farmers who supply our milk are also the owners of the co-operative. And that is probably the best explanation for why we are so special and unique.
