Stilfser Consortium
Bolzano cheesemakers founded the Stilfser Cheese Consortium on February 15th, 2008. The alliance serves as a
tutelary consortium for the production and commercialisation of
Stilfser Cheese D.O.P. Stilfser is the only cheese in South Tyrol to have obtained the D.O.P. or denominazione di origine protetta designation. The designation, which was awarded in 2007,
protects and guarantees its quality and origin.
The consortium, which the Italian Ministry of Agriculture accredited officially in March 2008, monitors compliance of rules prescribed by the EU for production and distribution of D.O.P. products.
